Call for Speakers

We invite researchers, industry practitioners, and innovators to submit abstracts for talks at the WHISKEY-AI Workshop 2026, a multidisciplinary forum exploring new approaches to fermentation and beverage ageing processes with a focus on improving efficiency, quality, and sustainability.

The workshop brings together expertise from chemical and biochemical engineering, food science, chemistry, biotechnology, instrumentation, and data-driven methods. Contributions may draw on experimental work, mechanistic modeling, advanced sensing, or computational approaches, including machine learning, but should emphasize relevance to real-world fermentation and production systems.

The event will run in a noon-to-noon format (starting at 1:00 PM on the first day and concluding at 12:00 PM on the second day) and is free of charge for all accepted participants.

Format and Structure

The workshop is designed to encourage both high-level perspective and interactive exchange. The first day will focus on plenary and keynote talks, complemented by a roundtable discussion aimed at identifying key challenges, opportunities, and community priorities. The second day will adopt a more interactive, workshop-style format, potentially including small-group discussions and short, flash poster presentations (timing to be confirmed, possibly integrated into the first day).

We welcome contributions including (but not limited to):

  • Fermentation science and process optimization
  • Ageing and maturation dynamics in beverages
  • Process intensification and scale-up strategies
  • Advanced sensing, instrumentation, and process monitoring
  • Hybrid, mechanistic, and data-driven modeling approaches
  • Digital tools, including machine learning, for process understanding and control
  • Sustainable and energy-efficient production methods
  • Flavor development, quality control, and product consistency
  • Industrial case studies and technology deployment
  • Environmental impact, resource efficiency, and lifecycle analysis
